糖醋脆皮鱼(过程图)[12P]
这道菜大概有十年都没做过了,呵呵。今天周末就在家试着做一次,恩~过程还算记得清楚。下面直接上图吧。

1、将鱼洗净撒干水分,在鱼头下部切一刀、鱼尾部同样,抽出鱼腥线。

2、鱼身改刀,切瓦块片。从鱼肉最厚的背鳍下刀,尽量不要切到鱼肚子,不然过油炸制的时候容易断开。b7q,s0A M;T2H+N

3、鱼身撒少许盐、料酒,腌渍20分钟。然后用鸡蛋一只、水淀粉、面粉适量,调成糊。使鱼身全部沾满芡糊,然后在扑一层干粉。
