芥菜排骨煲是餐厅的常备菜式,“点餐率”也颇高。这道汤羹的制作方法其实不难,自己在家也能烹制。不过餐厅常用上汤做底,我们“化简”后直接用清水也成,排骨经过几十分钟的熬煮,肉味渗进汤水,虽没上汤浓郁,但也非常清香,兼带有芥菜的特殊风味和黄豆的甜,难怪会这么受欢迎。
