香酥红糟骨
[size=4] 红糟是福州有名的特產,可用于多种不同的烹调,而用小排骨来腌做然后再拿去炸的香酥红糟骨,是一级棒的香口菜,其色清红,其味醇香,肉质鲜嫩,外酥肉软,微咸带甜别有一番风味,味道极像叉烧骨且帶有浓而香的酒糟味,有机会请一试吧.下酒的好菜式....

材料与制作:小排骨一大塊洗淨,切成三块放进开水用中火煮一小时拿出切条备用.蒜末,美極醬油,料酒,蜜糖(颜色光亮),紅糟四大匙,味精,盐一起拌勻,放熟排骨进去醃4-6小時左右.热油锅,大火炸成香酥,盛出凉后摆盘,余下的醃汁再开小火煮至稠,倒在小碟做沾汁.[/size]
